Homemade Baked Beans

Serves: 2-3

INGREDIENTS:

  • 1 tin of cannellini beans, drained and washed

  • 1 tin chopped tomatoes

  • 1 small shallot, sliced

  • 1 small garlic clove, finely diced

  • 1 tbsp balsamic vinegar

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • Handful of coriander, chopped

  • Salt and pepper

METHOD:

Heat the olive oil in a non-stick pan and once hot add the shallots and garlic. Cook for 3-4 minutes until they are softened, you may need to add a little water to avoid them sticking.

Next add the cannellini beans, tomatoes, smoked paprika, balsamic vinegar, salt and pepper.

Let them simmer for 10-15 minutes.

Season to taste and sprinkle with fresh coriander before serving


TIPS: Serve on toast, baked potato or even with rice
